Breakfast Burrito Cups

Today, I baked these Breakfast Burrito Cups because I like the idea to keep them in the fridge or freezer and pop them in the microwave for a quick, healthy, hot breakfast.  Sweet Stackers layer foods using a stackable food storage system in a variety of containers.  This prevents foods from sticking together or getting soggy.

Happy New Year!  Personally, I have never been into making resolutions.  This year is different and I am setting a goal that is taking one more step to eating better for the whole family.  Drumroll please…..I am not buying cereal!

Overall, I believe that we do well eating well rounded meals.  But breakfast is the one area where I think we can do better!  The mornings are hectic.  First, I am NOT a morning person.  My kids know that Mom needs to have a few sips of coffee before we can start discussing any aspect of the morning routine.  Three young kids bring the typical morning rush trying to get them out of the door on time.  Cereal is the perfect quick breakfast.  But even the cereal that we have considered to be the “less-sugar” cereals are still packed with sugar and limited nutrition.  I myself quit eating cereal for about 2 years because I realized I was starving by 9 or 10 A.M.  Unfortunately, my kids LOVE cereal and will even eat it as an afternoon snack since they can make it themselves.  So if I don’t have cereal in the house, no one will eat it.

I have been doing some research as how to make quick heathy breakfasts!  This is one of the make ahead recipes to keep in the freezer.  A variety of fillings can be used, so get creative!

Breakfast Burrito Cups

yields 12 individual cups

3 – 10 inch flour tortilla

variety of diced veggies/cooked meat [green pepper, mushrooms & ham]

5 eggs

2 TB milk

shredded Cheddar cheese – optional

 

Preheat oven to 350 degrees.  Spray 12 count muffin tin with oil.

Cut the tortilla into quarters.  Press gently into the muffin tin to form cups.  Sprinkle the diced veggies and meat into the cups.  In a small bowl, whisk the eggs and milk together.  Poor even amounts of egg mixture into each cup.  Sprinkle a pinch of shredded cheese on top of each cup.  Cover with aluminum foil and bake for 30 minutes.  Uncover and bake for an additional 5 minutes until the egg is cooked through and lightly browned.

 

 

Tomato Harvest Bruschetta

Loving my veggie garden this year because with all of the rain – comes a huge harvest of tomatoes!  For Labor Day weekend, I made a few different recipes using tomatoes.  Bruschetta was at the top of my list!  So easy to make and you don’t need plum tomatoes.  I used the large juicy big boy-type tomatoes!

Slice a baguette thin and place on a cookie sheet in one layer.  Place under a hot broiler for just a minute or two until they start to brown.  Flip to the other side and repeat.

When they come out of the oven, drizzle with olive oil and rub the top surface with a sliced garlic clove.

Toasted Baguette

Using 3 or 4 large tomatoes, slice a tomato side ways (so that the top half of the tomato has the vine) and squeeze the juice and seeds over the kitchen sink.  Repeat with the bottom half to remove seeds.

Dice the tomatoes, drizzle with olive oil, S&P to taste.

Fresh basil!  Pull 10-12 fresh basil leaves, roll them up together and slice thin.  Add to the tomato mixture and stir.

Scoop the tomato mixture on each toasted baguette slice.

Banana Cookies

This recipe tastes and make the house smell just like Banana Bread…but in cookie form!  The cookies are moist and cake-like with the perfect amount of sweetness drizzled over the top.  The best way to store them, especially during the summer is to layer them separately to prevent them from sticking together.  Sweet Stackers convert your containers to multi-level using stackable trays and risers.  They insert perfectly into major brand air-tight food storage containers to make the perfect cookie container.  This whole batch of cookies were layered neatly in one 3″ deep container.

This recipe came from a blog called Pots Pans & Parkers.  The banana cookies turned out delicious and of course everyone in the house wanted one immediately when they came out of the oven based on the aroma.  I had to shoo them out of the kitchen in order to make the frosting!

Banana Cookies

  • 3/4 cup butter
  • 3/4 cup white sugar
  • 1 egg
  • 1/2 teaspoon vanilla
  • 2 mashed bananas (3 if they are small)
  • 1/4 teaspoon salt
  • 1 teaspoon baking soda
  • 2 cups of flour

Preheat oven to 350°.

Cream the butter and sugar together.  Add egg, vanilla and bananas.  Sift flour, baking soda and salt together.  Gradually add the flour mixture.

Place a scoop of cookie dough onto an ungreased cookie sheet.  Bake for approximately 9 minutes or until the bottom are golden brown.

Banana Cookie Frosting:

  • 1/4 cup milk
  • 1/4 cup butter (one stick)
  • 1/3 cup brown sugar
  • 1 tsp vanilla
  • 2 cups powdered sugar

Scald the milk in a pot. Add the butter, brown sugar and vanilla.  Bring to a boil on a medium heat.  Gradually add the powdered sugar into the pot, constantly stirring to avoid sugary clumps.  (note: you can add more or less powdered sugar depending how thick or thin you want the frosting)

The Key to Baking Great Tasting Cookies!

The key to making the best rollout cookies is how you store them.

Have you ever tasted sugar cookies that are beautifully decorated, but really don’t taste great because they are hard and crunchy?  Mostly likely this occurs when the cookies are not stored properly while decorating the cookies.  Decorating can be a long tedious process that requires the cookies to sit out and dry to prevent the icing from getting ruined or smudged.  Many decorators will leave them dry on their kitchen countertops overnight.  Usually this results in dry, crunchy cookies because they weren’t stored in an air-tight container.

I have been using the same sugar cookie recipe for years and found Sweet Stackers to be a baker’s best tool for cookie storage.  Once the cookies come out of the oven, they are immediately set on a cookie rack to cool.  When completely cooled, they can be decorated or stored in an air-tight container until the decorating process begins.  While icing the cookies, it is possible to keep the cookies fresh and stored safely in an air-tight container!  The cookies can be placed in the bottom of a container or on the Sweet Stackers trays as they are being iced.  The risers can be carefully positioned in between the cookies and the stackable trays can be lowered above a layer of cookies without touching them.  The cookies can finish drying in the air-tight container and this will produce soft, buttery cookies for days to come! Appetizer, Anniversary and a Giveaway

This past week was my 2nd Anniversary for my PartyKitchen blog. Much is still the same in the past couple of years and some is exciting and new for me. I love to share my cooking and baking creations coming from my kitchen to yours. Plus, I still enjoy to entertain family and friends for all occasions from holidays to kid’s birthday parties. My girls are a couple of years older now and it is fun to get them more involved in the daily goings on in the kitchen. Hence there’s always a party in my kitchen.

Need a perfect appetizer to serve for a game day or Superbowl party? Baked Potato Bites will be a huge hit! Make them ahead of time and transport them to a party. They are easy, can be served warm or cold and topped with your favorite baked potato toppings – like cheese, sour cream, bacon and chives.

Baked Potato Bites Appetizer

Baked Potato Bites

  • 8-10 petite gold potatoes, cut into ¼-½ inch slices
  • 3 tablespoons butter, melted
  • 1 cup cheddar cheese, shredded
  • 5 slices turkey bacon, cooked and roughly chopped
  • optional additional toppings (sour cream, chives, etc.)

Preheat oven to 425°.

Brush melted butter on foil covered cookie sheet.  Place sliced potatoes flat on cookie sheet and brush tops with additional melted butter.  Bake for 30 minutes.

Flip potatoes on cookie sheet and bake for 10 additional minutes.  Remove from oven and sprinkle the potatoes with cheese and bacon.  Bake for an additional 5 minutes.

Sweet Stackers – Classic Deviled Eggs

Deviled Eggs are a classic appetizer summer picnics or barbeques.  Did you ever have a difficult time trying to store or transport an appetizer like this?  There are special containers and glass platters made specifically for deviled eggs…but seriously, where do you have room to store a container or large platter that you may only use once in a while and ONLY for deviled eggs?

Sweet Stackers stackable trays can create two layers of deviled eggs in one 3″ deep air-tight container.  This is perfect for transporting an appetizer like this to party or picnic.  Plus Sweet Stackers trays can be used for so much more!

In order to prevent the eggs from sliding around, I placed curly parsley in the bottom of the container and on one of the trays,  The eggs perfectly nested in between the parsley which made them easy to fill.  The parsley was not only there to hold them, but also made a pretty presentation.

Classic Deviled Eggs

8 eggs; hard-boiled and peeled

1/4 cup mayonnaise

1 teaspoon yellow mustard

1 teaspoon vinegar

salt & pepper to taste

paprika for garnish

Hard boil the eggs, cool and peel.  Slice eggs lengthwise in half, reserve the yellow yolk in a bowl.  Mash the yolk with a fork, then mix with mayonnaise, mustard, vinegar, S&P until creamy.

Scoop a spoonful or pipe the mixture into each egg white until full.  Sprinkle with paprika for garnish.

Kolacky – Stack and freeze them!

Yesterday, I went to Czech-Moravian picnic.  There was Czech food, traditional folk dancing and yummy homemade desserts!  This reminded me of a post that I wrote before last Christmas about Kolacky (i.e. Kolache, kolace, kolach, koláče).  Kolacky are a Czech cookie filled with fruit, poppyseed or cheese.  Many other eastern European countries also make them or something similar.  Check out my post to view the recipe…my recipe produces a moist kolacky dough because it uses a handful of ingredients including cream cheese.  The best part of kolacky is that they can be filled with any flavor of fruit filling.  I think my favorite is when they are filled with apricot.

Raspberry and Apricot Kolacky

My family and I usually bake kolacky for the holidays.  Kolacky are the perfect dessert after a large feast because they are bite sized.  You can always squeeze at least one in!  Since there are so many foods to prepare for a holiday dinner, we bake kolacky a couple of weeks in advance and freeze them.   They freeze perfect!  But, they can’t be stacked in the same container because of the jelly or fruit filling.  I had an idea to design trays that fit in air-tight plastic food storage containers….and that is how SweetStackers came about!  Using the Stackable Food Storage System, you can layer a whole batch of kolacky or any cookies, bars or pastries in two or three layers, in one typical 3″ container without them sticking together.  This makes is possible to place only one container in your refrigerator, freezer or pantry.
