Sweet Stackers Summer Product Feature

From time to time, it would be fun to feature one of our Sweet StackersTM products, slash the price and show the many ways to utilize them.

This months feature is the Sweet Stackers 7.75″ x 11″ tray set.  This set contains 2 – trays, 4 -1.25″ large risers and 8 – .75″ small risers.  This set fits the popular Rubbermaid® 1 gallon TakeAlongs, which are typically sold in a two pack and can be found in local grocery stores, Target, Walmart, etc.  These containers are great because they are reusable, but inexpensive enough that you could transport and leave at a party.

This set is perfect for stacking 2 or 3 layers of food in one container.  These decorated spritz cookies fit neatly in 3 layers using the .75″ risers.  If you need deeper layers for storing brownies, dessert bars, appetizers or donuts, the larger 1.25″ work perfectly and creates two layers.

Spring Daisy Spritz Cookies

Bring on Spring!  We are finally getting a break from this crazy harsh winter.  It was so nice to bake with bright sunshine and some fresh air filling the house.  My daughter is having a Daisy Girl Scout Investiture Ceremony tonight and I wanted to make a special little treat for our troop.  These Daisy Spritz Cookies will be perfect to celebrate!

Spritz Cookie Recipe

  • 3 ½ cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 ½ cups butter softened
  • 1 cup granulated sugar
  • 1 egg
  • 2 tablespoons milk
  • 1 teaspoon vanilla extract

Sift the flour and baking powder.  On high speed, beat the butter and sugar until light and fluffy.  Add the egg, milk and vanilla extract.  Lower the mixer speed and add the flour mixture slowly until combined.  Fill the cookie press (I love my Wilton Cookie Press!) with dough and place the desire disk in.  Press cookies onto an ungreased cookie sheet.  Back for 10-12 minutes until the edges are lightly browned.  Place on a cooling rack.  Makes 7-8 dozen cookies.

Girl Scout Daisy Cookies

Once cooled, I decorated the daisy center with the Girl Scout Daisy blue center.  Just like the first patch they earn when they can recite the Girl Scout Promise.  The centers were iced with a dollop of glaze (1 cup confectioners’ sugar, 1 teaspoon corn syrup and 1 tablespoon of milk) and dyed with two drops of blue food coloring.  Blue crystal sugars were sprinkled on top.

Coconut Key Lime Bars

Most of the time, I bake from scratch.  But there are those times when you need a quick dessert.  I always keep a couple of cake box mixes in my pantry and tada…we have super simple dessert bars!  The marshmallow crème makes a tasty and easy topping – a bit of sweet to complement the tart lime flavor.

Coconut Key Lime Bars

  • 1 box of Pillsbury Key Lime Cake Mix
  • 2 eggs
  • 1/2 cup of butter, melted
  • 2 cups of sweetened flaked coconut
  • 1 cup of marshmallow crème *

Preheat oven to 350°.  Grease a 9 x 13″ pan.

In a large mixing bowl, combine the cake mix, eggs, butter and 1 ½ cups of coconut.  Spread evenly in pan and bake for 19-20 minutes until a toothpick comes out clean and the edges turn golden brown.  Let cool.

Sprinkle remaining ½ cup of coconut on a cookie sheet.  Bake for 6 minutes, watching carefully until it is lightly toasted.

Spread marshmallow crème in a thin layer over the dessert bars and sprinkle with toasted coconut.

*note:  could use fresh whip cream or Cool Whip as a topping

Tomato Harvest Bruschetta

Loving my veggie garden this year because with all of the rain – comes a huge harvest of tomatoes!  For Labor Day weekend, I made a few different recipes using tomatoes.  Bruschetta was at the top of my list!  So easy to make and you don’t need plum tomatoes.  I used the large juicy big boy-type tomatoes!

Tomato Harvest Bruschetta appetizer

Slice a baguette thin and place on a cookie sheet in one layer.  Place under a hot broiler for just a minute or two until they start to brown.  Flip to the other side and repeat.

When they come out of the oven, drizzle with olive oil and rub the top surface with a sliced garlic clove.

Toasted Baguette

Using 3 or 4 large tomatoes, slice a tomato side ways (so that the top half of the tomato has the vine) and squeeze the juice and seeds over the kitchen sink.  Repeat with the bottom half to remove seeds.

Dice the tomatoes, drizzle with olive oil, S&P to taste.

Fresh basil!  Pull 10-12 fresh basil leaves, roll them up together and slice thin.  Add to the tomato mixture and stir.

Scoop the tomato mixture on each toasted baguette slice.

Banana Cookies

This recipe tastes and make the house smell just like Banana Bread…but in cookie form!  The cookies are moist and cake-like with the perfect amount of sweetness drizzled over the top.  The best way to store them, especially during the summer is to layer them separately to prevent them from sticking together.  Sweet Stackers convert your containers to multi-level using stackable trays and risers.  They insert perfectly into major brand air-tight food storage containers to make the perfect cookie container.  This whole batch of cookies were layered neatly in one 3″ deep container.

This recipe came from a blog called Pots Pans & Parkers.  The banana cookies turned out delicious and of course everyone in the house wanted one immediately when they came out of the oven based on the aroma.  I had to shoo them out of the kitchen in order to make the frosting!

Banana Cookies

  • 3/4 cup butter
  • 3/4 cup white sugar
  • 1 egg
  • 1/2 teaspoon vanilla
  • 2 mashed bananas (3 if they are small)
  • 1/4 teaspoon salt
  • 1 teaspoon baking soda
  • 2 cups of flour

Preheat oven to 350°.

Cream the butter and sugar together.  Add egg, vanilla and bananas.  Sift flour, baking soda and salt together.  Gradually add the flour mixture.

Place a scoop of cookie dough onto an ungreased cookie sheet.  Bake for approximately 9 minutes or until the bottom are golden brown.

Banana Cookie Frosting:

  • 1/4 cup milk
  • 1/4 cup butter (one stick)
  • 1/3 cup brown sugar
  • 1 tsp vanilla
  • 2 cups powdered sugar

Scald the milk in a pot. Add the butter, brown sugar and vanilla.  Bring to a boil on a medium heat.  Gradually add the powdered sugar into the pot, constantly stirring to avoid sugary clumps.  (note: you can add more or less powdered sugar depending how thick or thin you want the frosting)

Frosted Banana Cookies

The Sweet Stackers risers are versatile!  The risers are used to stack full-sized cooling racks to let the cookies cool and the frosting dry – saving space on the kitchen counters.

Appetizer, Anniversary and a Giveaway

This past week was my 2nd Anniversary for my PartyKitchen blog. Much is still the same in the past couple of years and some is exciting and new for me. I love to share my cooking and baking creations coming from my kitchen to yours. Plus, I still enjoy to entertain family and friends for all occasions from holidays to kid’s birthday parties. My girls are a couple of years older now and it is fun to get them more involved in the daily goings on in the kitchen. Hence there’s always a party in my kitchen.

The new and exciting part for me is to start a little business while staying home with my girls. Sweet Stackers was a solution to a problem that has frustrated me for years. Need a perfect appetizer to serve for a game day or Superbowl party? Baked Potato Bites will be a huge hit! Make them ahead of time and transport them to a party. They are easy, can be served warm or cold and topped with your favorite baked potato toppings – like cheese, sour cream, bacon and chives.

Baked Potato Bites Appetizer

Baked Potato Bites

  • 8-10 petite gold potatoes, cut into ¼-½ inch slices
  • 3 tablespoons butter, melted
  • 1 cup cheddar cheese, shredded
  • 5 slices turkey bacon, cooked and roughly chopped
  • optional additional toppings (sour cream, chives, etc.)

Preheat oven to 425°.

Brush melted butter on foil covered cookie sheet.  Place sliced potatoes flat on cookie sheet and brush tops with additional melted butter.  Bake for 30 minutes.

Flip potatoes on cookie sheet and bake for 10 additional minutes.  Remove from oven and sprinkle the potatoes with cheese and bacon.  Bake for an additional 5 minutes.

Kolacky – Stack and freeze them!

Yesterday, I went to Czech-Moravian picnic.  There was Czech food, traditional folk dancing and yummy homemade desserts!  This reminded me of a post that I wrote before last Christmas about Kolacky (i.e. Kolache, kolace, kolach, koláče).  Kolacky are a Czech cookie filled with fruit, poppyseed or cheese.  Many other eastern European countries also make them or something similar.  Check out my post to view the recipe…my recipe produces a moist kolacky dough because it uses a handful of ingredients including cream cheese.  The best part of kolacky is that they can be filled with any flavor of fruit filling.  I think my favorite is when they are filled with apricot.

Raspberry and Apricot Kolacky

My family and I usually bake kolacky for the holidays.  Kolacky are the perfect dessert after a large feast because they are bite sized.  You can always squeeze at least one in!  Since there are so many foods to prepare for a holiday dinner, we bake kolacky a couple of weeks in advance and freeze them.   They freeze perfect!  But, they can’t be stacked in the same container because of the jelly or fruit filling.  I had an idea to design trays that fit in air-tight plastic food storage containers….and that is how SweetStackers came about!  Using the Stackable Food Storage System, you can layer a whole batch of kolacky or any cookies, bars or pastries in two or three layers, in one typical 3″ container without them sticking together.  This makes is possible to place only one container in your refrigerator, freezer or pantry.

Storing Your Decorated Sugar Cookies

In the past, when I was decorating sugar cookies I had cookies all over my kitchen and I would run out of counter space.  I think I lost a few cookies along the way because I just didn’t have the space and a few ended up on the floor and then the garbage.  The icing took quite a while to set and I was “stuck” because it made it hard for me to do anything else in the kitchen…from making dinner to even cleaning up the dishes.  Plus the cookies taste better when they are properly stored in an air-tight container!
