Sweet Stackers – A Cookier’s Product Review

I was totally thrilled and honored to have Kim the Cookier, from The Cookie Puzzle, write a review on how she uses Sweet Stackers for her cookie decorating.   After learning about Sweet Stackers, Kim has changed the way she stores her cookies while decorating.  She used to store her cookies in large under-your-bed bins that were not air-tight to smaller, deeper food storage containers using Sweet Stackers.  Sweet Stackers layer your cookies on stackable trays which insert into your containers.  She was able to get 37 thickly rolled cutout cookies in one container.  The trays can be easily removed during the decorating process – as you can see from icing to stenciling and more!

Promising Ice Cream….Sandwiches!

The first week of school is coming to an end.  My little one has started Kindergarten and had a rough morning.  Day 1, excited, but clung to Dad as she was getting on the bus.  Day 2, tearing up, got in line to get on the bus, then made a quick turn to run back to me.  Day 3, crying most of the morning, crying to the bus stop and needed me to hold her hand onto the bus.  Of course, she has a great day and is super smiley when she gets off of the bus!  But with all of the tears this morning, we promised her ice cream when she gets home.  Hoping to distract her from her anxiety.

But I have really, really wanted to make homemade chocolate chip cookies and tada – I had a great idea!  Ice Cream Sandwiches.

Actually tried a new chocolate chip cookie recipe from Allrecipes and they were delicious!  They turned out to be the perfectly shaped, with a thin crispy outside and soft chewy middle.  I baked these an extra 2 minutes, but followed the recipe exactly.  They made 45 cookies using a 1 inch cookie scoop.

Once cooled, I transferred the cookies to a staging container to keep them extra fresh.  Sweet Stackers neatly organizes the cookies in tiers.

Time to fill the cookies!  Place a good round scoop of ice cream in between two chocolate chip cookies (they bottom of the cookies touching the ice cream).  I used a smaller container to store 12 ice cream sandwiches separated using a Sweet Stackers tray.

Even though I was in a cool room, the ice cream melted quickly.  I suggest placing the container in the freezer and adding one or two sandwiches at a time.  But even is some ice cream dripped, the container and trays wipe down easily.  The trays also made a nice surface to work on.

Raspberry Almond Thumbprint Cookies

Thumbprint cookies are NOT just for the holidays!  In fact, they are perfect for summer when the berries are harvested.  By preserving summer berries, we are able to enjoy them year round.  These thumbprint cookies are so easy, using a handful of ingredients and buttery delicious.  Use any flavor jam, but the homemade sweet U-Pick Raspberry Preserves are the perfect topping!

Raspberry Almond Thumbprint Cookies

  • 1 cup butter, softened
  • 2/3 cup sugar
  • ½ teaspoon almond extract
  • 2 cups flour, sifted
  • ½ cup raspberry preserves (or any flavor jam)

 

Using and electric mixer, cream the softened butter and sugar on high.  Add the almond extract.  Lower the mixer speed and gradually add the flour.  Refrigerate the dough for one hour.

Preheat the oven to 350°.  Shape the dough into 1 inch balls and place on an ungreased cookie sheet about 2 inches apart.  Make an indentation using your thumb in the center of each ball.  (I make two thumbprints at 90 degree angles, to make a better circle)  Fill each center with about 1/4 teaspoon of preserves or your favorite jam.

Bake for 12-15 minutes until the edges are lightly browned.  Remove to a cookie rack.

Double-Lemon Cheesecake Bars

There is something about spring that brings on a cravings for lemon!

These Double-Lemon Cheesecake Bars were perfect for an adult Easter dessert.  Double lemon because the cheesecake had a hint of lemon and topped with a lemon glaze.  Delish!  Cut into individual portions, stacked, stored and ready to transport to a party without a mess using Sweet Stackers.

SweetStackers Double Lemon Cheesecake Bars

Double-Lemon Cheesecake Bars

  • 2 cups vanilla wafer crumbs
  • 3 tablespoons butter, melted
  • 4 – 8 ounce packages of cream cheese, softened
  • 1 ¾ cups sugar, divided
  • 3 tablespoons flour
  • 1 tablespoons lemon zest
  • 1/3 cup lemon juice, divided
  • ½ teaspoon vanilla
  • 4 eggs, 1 separated
  • 2 tablespoons cornstarch
  • ½ cup water

Preheat oven to 325° and line a 9×13 inch pan with foil.  Mix wafer crumbs and butter.  Press into the bottom of the pan and bake 10 minutes.

With an electric mixer, beat cream cheese, 1 cup sugar, flour, lemon zest, 2 TB lemon juice and vanilla with mixer until blended.  Add 1 egg white (reserve the egg yolk for later use) and 3 whole eggs, adding one at a time while beating.

Pour batter over crust.  Bake 40 minutes or until center is almost set.  Cool 1 hour.  Refrigerate for 4 hours.

Glaze:  Mix cornstarch and remaining sugar in saucepan, gradually stir in water and remaining lemon juice.  Bring just to boil, stirring constantly.  Cook and stir until clear and thickened.  Lightly beat reserved egg yolk and stir in 2 TB hot cornstarch mixture.  Return to remaining  mixture in saucepan.  Cook and stir 1 minute or until thickened.  Cool.

Spoon glaze over cheesecake.  Refrigerate 1 hour.  Use foil handles to remove cheesecake from pan before cutting to serve.

 

 

 

The Key to Baking Great Tasting Cookies!

The key to making the best rollout cookies is how you store them.

Have you ever tasted sugar cookies that are beautifully decorated, but really don’t taste great because they are hard and crunchy?  Mostly likely this occurs when the cookies are not stored properly while decorating the cookies.  Decorating can be a long tedious process that requires the cookies to sit out and dry to prevent the icing from getting ruined or smudged.  Many decorators will leave them dry on their kitchen countertops overnight.  Usually this results in dry, crunchy cookies because they weren’t stored in an air-tight container.

I have been using the same sugar cookie recipe for years and found Sweet Stackers to be a baker’s best tool for cookie storage.  Once the cookies come out of the oven, they are immediately set on a cookie rack to cool.  When completely cooled, they can be decorated or stored in an air-tight container until the decorating process begins.  While icing the cookies, it is possible to keep the cookies fresh and stored safely in an air-tight container!  The cookies can be placed in the bottom of a container or on the Sweet Stackers trays as they are being iced.  The risers can be carefully positioned in between the cookies and the stackable trays can be lowered above a layer of cookies without touching them.  The cookies can finish drying in the air-tight container and this will produce soft, buttery cookies for days to come! Appetizer, Anniversary and a Giveaway

This past week was my 2nd Anniversary for my PartyKitchen blog. Much is still the same in the past couple of years and some is exciting and new for me. I love to share my cooking and baking creations coming from my kitchen to yours. Plus, I still enjoy to entertain family and friends for all occasions from holidays to kid’s birthday parties. Need a perfect appetizer to serve for a game day or Superbowl party? Baked Potato Bites will be a huge hit! Make them ahead of time and transport them to a party. They are easy, can be served warm or cold and topped with your favorite baked potato toppings – like cheese, sour cream, bacon and chives.

Baked Potato Bites Appetizer

Baked Potato Bites

  • 8-10 petite gold potatoes, cut into ¼-½ inch slices
  • 3 tablespoons butter, melted
  • 1 cup cheddar cheese, shredded
  • 5 slices turkey bacon, cooked and roughly chopped
  • optional additional toppings (sour cream, chives, etc.)

Preheat oven to 425°.

Brush melted butter on foil covered cookie sheet.  Place sliced potatoes flat on cookie sheet and brush tops with additional melted butter.  Bake for 30 minutes.

Flip potatoes on cookie sheet and bake for 10 additional minutes.  Remove from oven and sprinkle the potatoes with cheese and bacon.  Bake for an additional 5 minutes.

Pumpkin Cheesecake Cookies

This is, by far, my favorite time of the year!  There is something about the fresh crisp air, the hues of rust & orange, and the smell coming from my kitchen.  Somehow, I become obsessed with pumpkin.  In fact I am constantly stocking up my pantry with canned pumpkin as if I am not going to find pumpkin until next fall.  I love cooking and baking with it….pumpkin pancakes, pumpkin pie to pumpkin soup, oh my!

Last week I saw a tweet for Pumpkin Cheesecake Cookies.  Funny enough I “heard” Pumpkin Cheesecake and the cravings started.  I didn’t even realize at first that this was a cookie recipe.  But creamy pumpkin cheesecake in the form of a chewy cookie…I must try!  The recipe came from Jennie via her The  Messy Baker Blog.  (sounds like she is just as obsessed with pumpkin as I am!)  What a yummy and super easy recipe!

These cookies were very moist and chewy, definitely more “cake-like”.  When they came out of the oven, I pressed them a bit to flatten them with my cookie spatula.  Then transferred them to a cookie rack to cool completely.
